Spinach Ravioli in Light Olive Oil and Tomato Sauce

Ingredients

Spinach Ravioli, 10oz package

½ cup Olive Oil

½ cup Basil, torn

4-6 Garlic Cloves, minced

4 Roma Tomatoes, sliced thin

Salt and Pepper

Grana Padano Cheese, for grating

Instructions

In a large pan on medium high heat, add olive oil, basil, garlic and tomatoes. Cook while stirring for 5-7 minutes, Look for the tomatoes to break down completely to form a sauce. Adjust seasoning and set aside.

Cook ravioli as directed. When removing from pot, add a touch of pasta water. Serve with sauce and garnish with grated cheese.
