Hummus Veggie Wraps

Ingredients

Wraps

4 Tortillas or Wraps

1 cup Hummus

2 ounces thinly sliced Cheddar Cheese

1 ⅓ cups Baby Spinach

1 cup sliced Red Bell Pepper

1 cup Broccoli Sprouts

1 cup thinly Shredded Red Cabbage

1 cup Julienned Carrots

Green Goddess Dressing

3 Green Onions

1 Jalapeño Pepper

⅔ cup Greek yogurt

½ cup lightly packed Cilantro

Juice from 1 Lime, (2 tablespoons)

⅓ cup Olive Oil

½ teaspoon kosher Salt

½ tablespoon Maple Syrup or Honey

Instructions

Dressing

Chop the green onions. Seed and dice the jalapeño pepper.

Place the green onions and jalapeño pepper in a blender. Add the Greek yogurt, cilantro, lime juice, olive oil, kosher salt, and maple syrup or honey. Blend to combine. Transfer to an airtight container; the dressing stores in the refrigerator for 1 week.

Wraps

Spread each tortilla with 1/4 cup hummus. Top each with one-fourth of the Cheddar, spinach, bell pepper, sprouts, cabbage and carrots. Roll up each wrap.

Slice the wraps into 1-inch rounds. Serve with dressing for dipping, if desired.
