Ingredients
2 tbsp. Olive Oil, divided
1 Onion, finely chopped
4 Garlic Cloves, minced
1 lb Fettuccine
1 bunch Asparagus, ends trimmed, cut into 1-inch pieces
1/2 cup grated Parmesan Cheese
Zest from 1 Lemon
Salt and Pepper, to taste
Instructions
Bring large pot of salted water to a boil. Meanwhile, heat 1 tablespoon olive oil in a medium skillet. Sauté onion until soft, add garlic and sauté additional minute. Remove from heat.
Add pasta to boiling water. Cook according to package instructions — in final 2 minutes, reserving 1 cup pasta water, then add asparagus to boiling water. Drain cooked pasta and asparagus. Return to pot; add 1 tablespoon olive oil, onion and garlic mixture, Parmesan, lemon zest and 1/2 cup reserved pasta water. Season with salt and pepper; add additional pasta water as needed. Serve!
